3 tablespoons frozen passion fruit juice concentrate, thawed3 tablespoons minced shallot4 tsp. sherry wine vinegar1 tsp. Dijon mustard1 tsp. whole coriander seeds, coarsely cracked3 tablespoons olive oil8 cups herb salad mix1 large ripe mango, sliced2 small avocados, slicedWhisk the first five ingredients together to blend; gradually whisk in the oil. Season the dressing with salt and pepper.Toss salad in bowl with ¼ cup of the dressing. Add the mango and avocado and drizzle with the remaining dressing.
